12x3 inch slice—4-5 squares without rosemary. Due to our “Cottage Food Industry” designation, we can’t yet top our focaccia with fresh herbs, cheeses, and so on…but we recommend that you do when you get it home!

Crunchy, airy, and oh-so-olive-oily. We use extremely high quality Italian olive oil to achieve a bright buttery quality, and we use a bread brine method to achieve a focaccia on part with even the best gluten-full focaccia's Tricia has tasted throughout Italy.

We hand shape everything we make with care, so no two loaves, crusts, bagels, or biscuits will be exactly alike. For us, this is part of the fun of baking and eating!

Important Note:

The flour we use for this product contains de-glutinated wheat starch that is certified by the FDA and Italian Celiac Association as safe for people with celiac disease (but NOT safe for people with a wheat allergies unrelated to gluten). We are currently selling our products under the Colorado Cottage Foods Act and cannot market them as “certified gluten free”—however, 100% of the ingredients we use are certified gluten free and there is no chance of contamination during our our preparation and baking process, as no products containing gluten (packaged or unpackaged) are allowed in our kitchen.
