It’s as simple as this: you have to try it to believe it’s possible. Flaky, buttery, airy, crunchy. It wasn’t until a visit to a small gluten free shop in Venice, Italy in 2019 that we saw the light: exquisitely layered, buttery puff pastry is possible without gluten-full flour.

It’s taken us a while to perfect the technique, and until we have a bigger operation, these little beauties will only show up every now and then…so be sure to add your name to the product notification list below if you want a shot at experiencing these!

We hand shape everything we make with care, so no two loaves, crusts, bagels, or biscuits will be exactly alike. For us, this is part of the fun of baking and eating!

Important Note:

The flour we use for this product contains de-glutinated wheat starch that is certified by the FDA and Italian Celiac Association as safe for people with celiac disease (but NOT safe for people with a wheat allergies unrelated to gluten). We are currently selling our products under the Colorado Cottage Foods Act and cannot market them as “certified gluten free”—however, 100% of the ingredients we use are certified gluten free and there is no chance of contamination during our our preparation and baking process, as no products containing gluten (packaged or unpackaged) are allowed in our kitchen.
